In 1990 two friends and I opened Chick-It-Out, a tiny take-out restaurant
in Carrboro. Lots of learn-as-you-go and several years later, we landed in Timberlyne as Margaret's
Cantina. (For a glimpse of the early years, take a look at the
display along the back hall.)
From the beginning, I've wanted to provide fresh, healthy food in
a warm and welcoming setting, food that reflects my Southern Arizona childhood and life experience since. A Southwestern
sensibility informs my food, but so does North Carolina bounty. I create many dishes to make use of local and seasonal
products and buy from local, independent businesses whenever possible. I belong to the Carolina
Farm Stewardship Association and regularly purchase a variety
of fruits and vegetables from Eastern Carolina Organics and Ayrshire, Jackson and Dancing Pines
farms. Also, Gardens of Paradise provides the restaurant with
chemical & hormone-free eggs from happy free-roaming chickens!
I believe that we all want to live well and eat well, and we all want
a little help with the cooking and cleaning. That's the niche I've tried to fill in the restaurant world. Because
our food is made in-house from wholesome ingredients, I think you can make healthy and pleasurable choices, no
matter your predilection. Whether you're vegetarian or carnivore, low-fat or low-carb, everything-in-moderation
or anything-goes, we have just the right meal for you!
